Caves Troglodyte

Cave dwellers of the vendômois love their tuffeau caves as much as the winemakers love their vines. Nowhere in France can one find such a combination of caves for drinking and storage. Next to the caves full of barrels of aging wine are caves with fireplaces dedicated to the consumption of the fruit of those barrels. The bright fires of vine clippings at the entry of these caves warm the spirit as much as the wine.

A man is Lord of his cave and he knows how to honor his guests in this valley of poets and Kings. It is in these caves that his guests will taste the crackling, dripping andouillettes grilled over burning vine clippings or the eels of the Loir River simmered in their skins in cast iron skillets. And it is only here that can taste a poulet ficelle after watching it spin on a string before a roaring fire.

All continue with an incomparable goat cheese, ripened in its skin, that it not sold but reserved for friends. And all will end with the delicious croquettes of the made only in Lavardin.
